ΣΥΝΤΑΓΗ ΧΟΙΡΙΝΗ ΤΗΓΑΝΙΑ

Τηγανιά χοιρινή
χοιρινη τηγανια με λεμονι
Υλικά
1 κιλό τηγανιά χοιρινή
1 λεμόνι(ΑΝ ΘΕΛΩ ΣΒΗΝΩ ΜΕ ΛΕΥΚΟ ΚΡΑΣΙ)
ελαιόλαδο
αλάτι
πιπέρι
ρίγανη
Εκτέλεση
βάζουμε το τηγάνι με το λάδι να κάψει
προσθέτουμε το κρέας και το τηγανίζουμε μέχρι να ροδίσει
αλατοπιπερώνουμε σβήνουμε με το λεμόνι και σερβίρουμε
Δεν ξεχνώ
αυτό το φαΐ το θέλει το λαδάκι του για να βουτάμε το ψωμί μας
καλή όρεξη

For the first time in almost 10 years I'm traveling far enough to need a passport. In fact, I had to renew my passport for the occasion. Yes, I am thrilled. My Sagittarius Moon is tickled pink at the prospect of being able to explore new territory AND to have the freedom to do it.
My kids are with my ex-husband for spring break and I'm going to St. Martin to enjoy a few days of fun in the Caribbean Sun. Holla!
Can you imagine my surprise when I realized that my travel dates just so happen to coincide with my Venus Return. This is an important indicator for love matters, and you can get your own personal Big Picture Love Forecast to find out what important romantic turning points are coming up for you.
OK, let me back up. You might be scratching your head right now wondering where my Venus thinks she's going. Allow me to explain ...
About planetary returns
You might be familiar with your Solar Return -- the exact moment each year when the Sun in the sky reaches the exact position it was in at the time of your birth. This is a special event each year and it sets up a temporary themed chart that explains volumes about what significant energy patterns might make up your next year. I work with Solar Returns during every client session and I have found them to be incredibly accurate.
But the Sun is not the only planet that returns to its natal position. Every year or so Mercury and Venus in the sky will make a conjunction to your natal Mercury or Venus. Every two years Mars does the same thing. Every 12 years Jupiter returns to its natal placement, and every 29 years or so it's Saturn's turn. If you live to be 84 you'll even get a Uranus Return!
You would read a return chart the same way you read a birth chart, except this chart is only active until the next planetary return. Return charts are meaningful tools to add to your astrological toolbox. They add depth of flavor -- kind of like the difference between cooking a pot of soup using canned broth versus taking the time to make a homemade stock first.
Your Venus Return affects love and money
When it comes to love and money, Venus is the place to look. Yes, transits, progressions and eclipses to your natal Venus will be the major markers to look out for in anticipation of a major shift in money and romantic matters. But to add even more depth of flavor to your analysis, it's a good idea to look at your Venus Return chart each year.
If you happen to be ruled by Venus (Sun or Ascendant in Taurus or Libra) then a Venus Return will be even more sensitive for you.
My Sun is in Taurus. My Venus Return is always a big deal. Always.
Return charts are cast for the location you are in when you have the actual return. I typically cast it for my hometown because, where else would I be? Well, this year there's an interesting change in the air because during my Venus Return on March 25 I'll be in Grand Case, St. Martin. Once I made this happy discovery I felt a sense of kismet stir in my soul. Surely, this vacation is happening when it is is destined. But how are the charts different? And what, exactly, does it mean for me in terms of love and money for the coming year?
Well, no matter where I am for the return, there is a tight stellium (group of planets together) between Venus, the Sun, Uranus and Mars in Aries. All of these planets make a supportive link to Jupiter. Having the Sun and Venus conjunct in a Venus Return symbolizes an extra special year in terms of finances and romance. So either way that pattern appears to be fated.
Why it looks to be a money-making year ...
What does change due to the different location is that now, instead of this stellium being in my 3rd House of Communication and short distance travel, it'll be in my 2nd House of Earned Income. The 3rd house symbolism still fits because I do earn a chunk of my income from writing and teaching. According to my Venus Return, that will continue to grow over the next year. Having this stellium in my 2nd house basically adds to the money making OOMPH of the Venus Return.
What I really love about the change of charts, though, is that in my "home" chart Pluto is conjunct the Ascendant and Uranus and Mars square Pluto on the Ascendant. To me, that is not a pretty combination. Now, with the St. Martin chart, Pluto is tucked way into my 12th House of Spirituality, possibly diluting the tension these nasty squares make. In the St. Martin chart, my Venus Return Ascendant is in early Aquarius and happens to form an exact sextile to the Sun and Venus.
Sudden, hidden expenses are a hallmark of this Venus Return chart, so although I'll be making considerably more money, I'll need to make smart investments and save because I may have at least one major aggravating expense to deal with.
Now, in terms of love ...
When the ruler of the Ascendant (also called your Rising sign) and Descendant in a Venus Return chart aspect one another in a friendly way, it does suggest that partnership may be coming together that year. Whether I look at my "home" chart or my "vacation" chart this is the case. Also, it appears that Jupiter is on the cusp of my 5th House of Romance. Because Venus, the Sun, Uranus and Mars all connect nicely to Jupiter, that bodes well for true love this year.
In the "home" chart Jupiter is comfortably wedged in the 5th house, so these aspects are also active.
Believe it or not, I am not an astrologer who advocates relocating just to get one of your return charts to look better. I feel strongly that if you're meant to go through a cycle or experience, you cannot escape it. It will show in the transits, progressions and eclipses. The return chart simply adds more depth to help flesh out the storyline.
Even though the differences are subtle, it does seem as if the Venus Return in St. Martin is a bit kinder when it comes to how the planets are arranged. Maybe my Venus just needed a vacation this year. Overall however, the themes for me in terms of love and money remain the same whether I stay home and drink wine on my couch or sip frozen drinks on the beach in St. Martin.
This will be my first experience with consciously tracking a relocated return in my own life and I look forward to taking notes. After all, I am a work in progress. Aren't we all?

A Venus Return.....
.....is a prime way of determining the degree of the element of romance in life over the next 13 months or so.
It also shows marriage and the arrival of material goods that often come as a windfall. It represents the beginning of a new cycle of love and happiness.
Look first to your natal chart to find out whether the Venus Return is of high impact. This would be shown by having Venus in any of the following categories:
1. Venus in the first three power planets
2. Venus in the top lowest friction planets
3. Venus in the most friction planets
4. Venus out of bounds by declination.
First of all, I calculate the chart for the exact moment that the degree takes place. This means that if Venus is in 10Sco23 47, in the natal chart, I calculate it for the moment it makes a transition from 10Sco23 46 to 10Sco23 47.
Secondly, its important to calculate it for the place where the client lives at the time. If the place where they lived most of the time during the chart changes, then you need to look at the chart with these changes in mind. However, you also can do it through 1/12 charts make for the moment that Venus moves into the next sign. So 10Sco23 47,’s next sub chart is 10SAG23 47. This is less important for fast moving planets like Venus and Mercury but very important for gauging the return impacts of the slower ones like Saturn or even Pluto.
Third, in doing return charts its essential that you are able to determine the strength and friction of the return planets and others to determine how impactive the return will be, and also such things as the significant midpoints to use. If you are not in the habit of doing this now, the extra information provided will flounder you.
Fourth, you will be looking at the transit of the return planet through the return chart to see impacts. You need to know the power and friction of the planets it touches both natally and in the return chart itself.
Fifth, MOST IMPORTANT, you are only interested in the kinds of impacts generated by the rulerships of the return planet in question. If its Venus, then you are looking at how love, harmony, and finances will play out over the next 14 months.

Venus Returns
Astrology Topics: Venus Return Charts
Although the most common Return charts are Solar and Lunar Returns, the Venus Return is a surprisingly revealing forecasting tool. A chart is drawn for the moment that Venus returns (each year) to its position at birth, and this Venus Return chart is then interpreted.
With the Venus Return chart, we are able to forecast the upcoming year in terms of social events and contacts, the love life, and to some extent, financial matters. Although the Venus Return happens approximately once a year, it does not occur as predictably as a Solar Return chart. If you were born mid-September, for example, your Venus Return chart may occur in September one year, October the next, July the next year, and so forth.

Key Things to Look For in the Venus Return Chart:
The position of Venus in the Return chart, by house and aspect. (The Venus sign will be the birth sign of Venus).
Planets on the angles (the cusps of the first, fourth, seventh, and tenth houses).
Strong configurations (aspects) in the chart, especially when Venus is involved.
Natal planets and points that conjunct Venus Return angles.
Of course, you can go into as much detail as you want when you are studying a VR chart. The factors above point to the more remarkable aspects in a reading.
An especially busy "Venus year" will be marked in the chart in a variety of ways. Venus might be on the Midheaven or Ascendant. Venus might be tightly conjunct the Sun and possibly another planet as well. The Return chart Vertex might be closely tied to the Nodes of the Moon (conjunct, opposite, or square) in a year when the native makes important social contacts.
Note: In my research, the Moon's Nodes and the Vertex should not be overlooked when studying the Venus Return chart. These points are often activated and prominent in a year when the native meets a significant other (lover, marriage partner, or friend).
An exceptionally sociable year is often indicated by Venus conjunct the Midheaven in the Venus Return chart. New opportunities to socialize, as well as a fresh new social image, are indicated. A planet in tight conjunction with the Ascendant in a Venus Return chart can suggest a meaningful year as well. For example, Pluto rising in the VR chart often points to a new romance that is life-changing.
It is always helpful to look to past Venus Return charts in your own lives and those of people close to you in order to see how Venus Returns work for you. Chances are, you will come across some exciting discoveries. For example, in one case, Return Venus was conjunct the 9th house cusp in a year when the native met a love interest while traveling. In another case, the native met a person who was to become a very significant and special romantic friend when Sun, Venus, and Jupiter were all conjunct on the cusp of the 11th house in the VR chart. (These planets also formed a square with the nodal axis—the nodal axis, I have found, is a very important indicator of social contacts in the VR chart).
Case Study:
The following chart is the Venus Return chart of a woman in the year she met her husband. This case study is continued from our study of romantic forecasting and timing (see the article here).
At first glance, we can see that the 10th house is very active in this VR chart. On closer inspection, we see that there are four personal planets, all within 2 degrees of each other, conjunct the Midheaven, including Venus! Venus, Sun, Mars, Mercury, and Midheaven form a close conjunction. This is an unusual and remarkable combination. If we had been looking at this VR chart in advance, we could have safely presumed that the upcoming year would be an extremely significant one, in a social/romantic sense, for the native.
Note that Jupiter is in a close trine to this cluster of planets, and that Jupiter is found at the beginning of the 6th house (the native met her husband at her place of work). Uranus is coming to a trine to the cluster as well (it was to be exact later in the year when she met her husband).
Although Pluto is not tightly conjunct the Ascendant, it is within 8 degrees of the Ascendant.
If you have read our Interpreting Solar Return Charts article, you will know that I am a proponent of factoring in the natal chart into interpretations of Return charts:
The native's natal 8th house cusp is exactly conjunct the Venus Return Ascendant.
The nodal axis is at early Aries and Libra, which aligns with the native's Ascendant-Descendant axis. The natal Ascendant is effectively brought to the cusps of the 11th and 5th houses in the VR chart, at the Nodal axis.
Note also that Chiron is conjunct the Vertex in the VR chart, and that this sextiles the dramatic cluster at the Midheaven.
Timing and the Venus Return Chart
Celeste Teal, in her outstanding book Identifying Planetary Triggers: Astrological Techniques for Prediction, suggests watching Venus transits to the Venus Return chart to attempt to zero in on times when events or situations are triggered. (1) And, it works!
In our example, the actual meeting of the native's husband occurred approximately 9 months after the date of the Venus Return. At the beginning of the period, Venus was of course in late Leo, which is the native's birth Venus position. A look through the ephemeris reveals the movement of Venus after the date of the Venus return. We essentially use Venus transits to the Venus Return chart with this method.
At the time of the actual meeting, Venus was at late Gemini, which was conjunct the Venus Return Vertex and Chiron in the 8th house (and sextile to the cluster of planets at the Midheaven).

What are RETURN CHARTS?
There are many astrological techniques that take the horoscope beyond its basic natal form. We can do progressions, transits, synastry, draconic, harmonics, composites, directions and more. And, we can do RETURN CHARTS!
A return is a chart drawn for the moment in time a natal planet returns to its exact birth position after completing a full orbit through the zodiac.
The MOON returns about every 28.5 days giving 13 LUNAR RETURNS a year. These charts portray inner and outer events from the perspective of feelings, emotions, security and survival.
Ever wonder why people say “Many happy returns” on your birthday? This is the return of the SUN to its exact birth position! Every 365 days, we have a Solar Return, occurring the day before, of, or after the birth date.
Solar returns portray inner and outer events based on individuation, the art of becoming who we are meant to be! It is like a preview of coming attractions for the new solar year.
MERCURY (mental and communicative) and VENUS (socially significant relationships and values) also return once a year within a month or so of the birthday.
MARS returns every 2 years. These charts generally reflect work, healthy aggression and basic energy.
The ASTEROIDS(between Venus and Jupiter) vary between 1 year to close to 12 years in their orbits. 433 Eros returns every 1.76 years, and describes experiences of erotic transformation. 16 Psyche returns every 5 years, and is about attuning to another through extrasensory abilities. 4450 Pan, returning every 3 years, is about raw creative energy, carnal drives and “panic” that leads to change. 4 Vesta, returning every 3.63 years, is about devotion, ritual, dedication to beliefs and sex as spiritual transformation.
JUPITER returns every 12 years, and has to do with our search for meaning and purpose, confidence and creative will.
SATURN returns every 28-29 and can reflect our sense of responsibility, maturity and power to build material foundations.
CHIRON and the other Centaurs return about every 51 years or more (for Kuiper Belt objects). Chiron returns are about healing, teaching and the preparation of the hero. How will we be heroic in this later stage of life?
URANUS returns every 84 and connects us with out sense of freedom, audacity and willingness to step outside of boundaries. Neptune and Pluto return every 164 years and 248 respectively. These outer planets do not return in the known span of a human life.
Sedna returns ever 11,000 years or so; clearly not applicable for this technique!Solar, Lunar, Mars, Jupiter and Saturn return charts are the most frequently used, though any return (or demi-return, or phase return) can be valuable. The major planet returns give the broad strokes, the asteroid returns add subtle and fine details.
HOW DO WE READ THEM?
As in all techniques, practice and experience brings a natural flow and familiarity. Here are some guidelines:
Return charts “last” from the moment of the return (or a bit before) until the following one. If you are doing a Venus return and the planet goes retrograde across the birth position a month later, a new return chart is created. When it goes direct across the birth point, another return is drawn.
Any return chart is read against the backdrop of the natal chart, not in isolation.
Location may be set for the birth place or the current residence. I use the birth place though other astrologers prefer re-location. Experiment for yourself on this.
Consider the orientation of the planet you are returning. A Venus return isn’t going to tell you a lot about meaning, purpose, knowledge and wisdom, but it can indicate social interactions, partnerships and changing values.
Lunar returns are great for feelings, but not so much about responsibilities in the pragmatic world.
Pay special attention to the returns of your chart ruler—the planet that rules the sign on your Ascendant. (I use traditional rulerships for this—Scorpio-Mars, Aquarius-Saturn, Pisces-Jupiter).
Guiding STEPS to READING RETURN Charts:
1. Look at the overall pattern of the return chart. Is it a splash, indicating diverse interests and activities? Is it a bundle pattern, suggesting a focus of interest in the occupied houses? Check the hemispheric emphasis. How does this correlate to the natal patterns? If the person has a natal sew-saw pattern and has a return chart bowl pattern, how comfortable will they be with it?
2. Look at the orientation of the signs emphasized. What is the strongest modality? Element? Polarity? What’s missing? How does that related back to the natal chart? Someone who has a natal emphasis in Cardinal Fire may have a lot to learn about practicality if the return chart emphasizes Fixed Earth. Take the declinations into consideration too! (And the Dwads)
3. What sign is on the Return Ascendant? That will bring the corresponding natal sign/house to the foreground, giving it first house importance. What houses are occupied? Stelliums? Where does the Natal Ascendant degree fall in the Return chart?
4. Look at the signs on the cusps. They indicate needs and drives and offerings. Aries in the return chart is where we want to start something new. Taurus is where we ground things practically. Gemini is where we get curious and want to learn. Think of each house as an area of life and the sign on the cusp as a symbol of the orientation, needs and wants in relationship to that area of life.
5. Check the aspects in the return chart. A lot of oppositions could indicate the need for objectivity and choices. Trines could coincide with ease or even lack of drive. Squares are struggles that get things moving. Look back at the natal chart to see how the solar return aspects compare. How will a natal Venus/Mars conjunction handle a solar return Venus/Mars opposition?
6. Place the return planets in the natal chart and read as a transit chart, then put them back in the return chart to interpret as the outcome of those transits.
7. Check the Lunar nodes, the house placement of the return planet in both return and natal charts (Sun in solar returns, Moon in Lunar returns etc.), interceptions, the house placement of the ruler of the return chart, both natal and return, any planets rising in the return chart (natal or return) and aspects between the return and natal planets and points. You can also look at the vertex, some Arabic parts, midpoints, asteroids and fixed stars. Keep orbs tights!
EXAMPLE SOLAR RETURN CHART:
Below is the NATAL & Solar Return charts of a man we will call Roman. The return is done for the place of birth, although he is no longer living there. Chart Data is withheld for confidentiality.
NATAL CHART sample chartSOLAR RETURN CHARTsample returnThis is an energy packed Solar Return, with Mars conjunct Uranus at perigee and perihelion! The opposition to the Moon/Sun/Ven/Jupiter stellium increases the injection of energy, giving objectivity, or at least the need to see things from an expanded perspective.
Knowledge and learning need to express through a wide lens, exploring new beliefs and meaning previously seen as insignificant. All this mutable emphasis could get out of control accept for the Cardinal Asc-Des, and SR Saturn Rising along with the N mid-heaven.
Let’s follow the steps and take a closer look at this return.
First, look at the major planet chart pattern of the Solar Return and compare it with the natal. The return chart (considering only major planets for now)is a locomotive pattern. Saturn "leads" the train with the Mars/Uranus conjunction at the "caboose".
Roman's interests this year will be specialized, with power in reserve to express the leading Saturn and to find ways to integrate the last to rise Mars/Uranus. His natal splay style emphasizes the need to express uniquely in the area of life described by the occupied houses. Splays are generally non-conformists, though Saturn rising this year will ask for some structure and focus.
The hemispheric emphasis in the Solar Return is the reverse of the natal chart. In the Natal, he has most planets above the horizon, indicating a drive towards career, public interaction and the transpersonal.
Now, for the year, Roman has an emphasis in planets below the horizon suggesting a more subjective learning, home and family orientation. He can take what he learns from this subjectivity and then apply it out to his career and social life.
Next, consider the orientation of the signs. What is the strongest modality in the Solar Return?
Mutable!
This suggests the need for flexibility and adaptation. His natal chart also has a strong mutable feel, making this Solar year familiar in its form of motion.
The element of earth dominates both the natal and Return charts, with each having some fire and water. The EARTH emphasis had an orientation towards pragmatic expression. It functions through the tangible realm, the 5 senses, and the information that is gleaned, analyzed and communicated from them. Again, like the modalities, this year Roman is on familiar ground when it comes to sign emphasis.
AIR is clearly the missing element. In the Solar Return, the only AIR planet is an outer one, Neptune in Aquarius, and the only Natal AIR is the Ascendant and South Node. This can mean a lack of easy objectivity. The orientation is more pragmatic, with an adjunct of feeling and intuition.
The rational, objective world of intellectual orientation is not the first thing he reaches for. (Yet look at Gemini’s 3rd house activity in this years Solar Return. It suggests he is going to need to do some mental work, communication, and make these a more natural form of expression).
What sign is rising on the Ascendant? CANCER! This suggests that for the year, Roman is going to have an increased sensitivity to the world. He may be more intuitive than usual, with a greater desire to nurture and be nurtured. Relationship and family issues come to the foreground, as does his natal 10th house.
This year, the 10th house of career, mission and profession become of first house importance. He is going to be thinking about security and safety. He’s going to be thinking about creativity and money (don’t ever underestimate how much Cancer thinks about money!)
Other houses that carry significance include the 3rd and 9th house axis. Here is the all important SUN, and the Solar Return Chart ruler is within 6 degrees of conjunction to the cusp. Roman has gone from an empty natal 3rd to a jam packed one for the year! What does this mean?The 3rd house has to do with ideas, communication, the written and spoken word and things that commune from point A to point B. Here we deal with the familiar paths, neighbors, relatives and those who teach, talk, communicate and learn.
The 3rd house is a busy place, with much coming and going, shuffling of papers, ideas, contracts and books. The emphasis is on the every day expression of thoughts and ideas through curiosity, learning, sharing and teaching. With the opposition to Mar/Uranus in the 9th, the urge to study and learn is expanded to a greater context.
Short trips turn into long ones, and contracts have deeper legal connotations. There is the thought of in-laws too. So much energy in this axis suggests legal studies, higher education, or the broadening of horizons through cross-cultural studies. Roman could well want to go to University, for the first time, or for yet another degree!
There could also be an awakening via a teacher, speaker or "guru" type that inspires new direction.The Natal Ascendant Degree falls in the SR 4th house, bringing the expression of WHO he is to the source of WHAT he is. This is very introspective, yet he won’t want to explore this alone.
Libra needs to partner, and this SR years says that will be in the home, domestic affairs and the exploration of inner emotional security issues. Cancer rising reinforces this. Briefly, the signs on the house cups indicate the following needs:
PISCES on the MC, ARIES intercepted in the 10th. This first part of the Solar Year, Roman needs to leg go (Pisces) of preconceived notions of his social identity. He is more than who he thinks!
Soon, Aries will kick in, bringing a whole new adventure and vitality (and possibly career, mission or profession) to the foreground!
TAURUS on the 11th suggests the need for a practical approach to groups and associations. Sensual comfort can come from friends. Keep goals realistic.
GEMINI on the 12th house cups needs to learn more about the unseen real. Here there is communication on a psychic level, meditation, lucid dreaming and multi-tasking. There could be teaching those institutionalized or less fortunate.
CANCER on the Ascendant wants nurturing and security. Roman may project a more sensitive side to the world, through artistic expression or communication.
LEO on the 2nd house cusp needs to be acknowledged for talents, resources and values. There is monetary generosity here.LEO on the 3rd house cups as well needs to shine in the community, be recognized for ideas and the written and spoken word.
VIRGO on the 4th house cups needs to organize domestic affairs and “get the house in order”! An analytical approach helps filter out what is valuable and what is out dated.
LIBRA intercepted in the fourth needs to share and partner on the domestic front, yet that may take a few months to blossom. This is were we relate and find balance, in the sacred haven of home.
SCORPIO on the 5th wants to get intensely involved in creative expression and the joy of distinct artistic endeavors. Here there can be issues of power.
SAGITTARIUS on the 6th house cups says be open to new adventures and possibilities in the nature of daily routine, work or “job”. This is where things can really expand.
CAPRICORN on the 7th house cups takes partnerships and socially significant unions seriously. There is a desire to build something lasting through commitment. This is were Roman may take more responsibility.
AQUARIUS on the 8th house wants to do something “different” with joint resources and merging experiences. Old ways shatter and new innovations arrive. This has a tantric feel.
AQUARIUS also on the 9th house says dare to expand your consciousness though travel, higher education, meditation or any exploration into the unknown.
A few ASPECTS to note include the N. mo/ju square that now becomes a SR conjunction. Emotions and confidence, beliefs and ambitions become more unified. The N. mo/ur trine become an SR opposition, suggesting the need to objectify obscure feelings, bring them into awareness. Radical change of emotional responses comes from a new orientation.
An Example of how to “place the SR planets in the Natal chart” and then “Back in the Natal” is Saturn. About to conjunct the natal MC by transit, and travel for 2.5 years through the 10th house, SR Saturn is in the SR 12th for the year. This means that all that emphasis on social identity, the need to build structure and security through the career, mission and profession, falls into 12th house matters as well. While working hard on external career plans, Roman needs to have time for quiet introspection and self-development. There is a need to work in privacy and isolation before taking the results out into the public.
Finally, consider the 11th house Lunar Node, which says that this is a year to ask for help from friends, when you need to, or associations. Sometimes we have to let go a little of the “individual” and feel what it is like to be part of a group. There could be creative community projects coming up that will demonstrate this beautifully.
That Juno/Psyche in Scorpio in the fifth may want a kind of commitment to the creative process or children of the mind, body or heart, yet N. Node says do it in the context of the greater whole.
The trine to Saturn can mean a willingness to take more responsibility, to define boundaries intuitively and commit to important matters of the heart and soul.Eros intercepted in the 4th say passions will unfold behind the private doors of the home, be it the studio or bedroom!
Fortuna in Cancer in the 1st says the more Roman expresses his needs authentically, the more he will feel the joy of his life unfolding. It can be as simple as that!

Ηπειρώτικη μπαμπανέτσα με σπανάκι και παντζαρόφυλλα
Μπατσαριά ή μπαμπανέτσα, η ηπειρώτικη πίτα με τις χίλιες δύο παραλλαγές. Κάθε νοικοκυρά έχει και μια παραλλαγή για το χυλό αλλά και για τη γέμιση. Όλες όμως οι παραλλαγές καταλήγουν σε απίστευτη νοστιμιά.
Μια υπέροχη πίτα, που γίνεται συχνά και με καλαμποκάλευρο αλλά και το άσπρο αλεύρι δεν αποκλείεται. Η συγκεκριμένη πίτα είναι απ΄αυτές που αγαπώ πολύ κι έτσι η μαμά μου, ξέροντας την αδυναμία μου αλλά και την δική της (-:))) την έφτιαξε και μου την παρουσίασε στο τραπέζι όταν γύρισα από τα μαθήματα κάποιο βράδυ. Είναι υπέροχο σνακ, καταπληκτικό δείπνο αλλά και το πρωί νοστιμότατο αλμυρό συνοδευτικό του καφέ.
Αν σας αρέσουν οι πίτες... δοκιμάστε την και δεν θα σας απογοητεύσει!
ΥΛΙΚΑ για ταψί 30-32 εκ. διάμετρο
Χυλός ζύμης
4 φλ.τσ. αλεύρι
1 κ.γλ. μπέικιν πάουντερ
Αλάτι και πιπέρι
4 κ.σ. ελαιόλαδο
Νερό όσο χρειάζεται για να γίνει ένας παχύρρευστος χυλός
Για τη γέμιση
500 γρ. σπανάκι, ψιλοκομμένο
5-6 φρέσκα κρεμμυδάκια, ψιλοκομμένα
Τα φύλλα από 7-8 παντζάρια, ψιλοκομμένα
2 κρεμμύδια ξερά ψιλοκομμένα
400 γρ. φέτα ή ανθότυρο θρυμματισμένο (προαιρετικά)
2-3 αβγά ελαφρά χτυπημένα (προαιρετικά)
Αλάτι και πιπέρι
1 πρέζα εστραγκόν
1/2 φλ.τσ. ελαιόλαδο + λίγο ακόμη για το άλειμα του ταψιού
ΔΙΑΔΙΚΑΣΙΑ
Προθερμαίνουμε το φούρνο στους 180 βαθμούς Κελσίου στον αέρα.
Ετοιμάζουμε τη γέμιση
Βάζουμε το σπανάκι, τα κρεμμύδια, τα κρεμμυδάκια και τα παντζαρόφυλλα με το ελαιόλαδο και τα αφήνουμε να σοταριστούν για 5-6 λεπτά.
Προσθέτουμε αλάτι, πιπέρι και το εστραγκόν.
Εάν θέλουμε την πίτα νηστίσιμη αφήνουμε έτσι τη γέμιση.
Εάν κάνουμε την πίτα αρτύσιμη, μόλις τα χόρτα κρυώσουν λίγο, προσθέτουμε τη θρυμματισμένη φέτα, τα αβγά και ανακατεύουμε καλά.
Ετοιμάζουμε το χυλό ζύμης
Βάζουμε σε ένα μπολ, το αλεύρι, το μπέικιν, το ελαιόλαδο, το αλάτι και το πιπέρι.
Προσθέτουμε σιγά σιγά νερό έως ότου έχουμε έναν παχύρρευστο χυλό.
Ετοιμάζουμε την πίτα
Αλείφουμε με λίγο ελαιόλαδο το ταψί και ρίχνουμε τον μισό από τον χυλό.
Επάνω τοποθετούμε τη γέμιση με τα χόρτα.
Ύστερα, περιχύνουμε με τον υπόλοιπο χυλό.
Βάζουμε στο φούρνο για 1 ώρα περίπου ή έως ότου ροδίσει η πίτα μας πάνω και κάτω.
Μόλις ετοιμαστεί, σβήνουμε το φούρνο και βγάζουμε την πίτα.
Την αφήνουμε να κρυώσει για 10-15 λεπτά και την κόβουμε.
TIPS
* Ο χυλός στη συγκεκριμένη πίτα έχει διάφορες παραλλαγές. Μπορούμε, άνετα, να χρησιμοποιήσουμε καλαμποκάλευρο, γάλα, αριάνι ή γιαούρτι αλλά και αυγό. Απλά έτσι δεν είναι νηστίσιμη γι αυτό και σας έδωσα την απλή και νηστίσιμη μορφή της.

Καλημέρα Αγγελική μου! Το εστραγκόν δίνει πράγματι στην πίτα ένα ιδιαίτερο άρωμα και το χρησιμοποιώ σε χορτόπιτες... αλλά για μένα το νοστιμότερο είναι τα παντζαρόφυλλα.
Πράγματι είναι τέλεια λύση!

Τί περίεργο Έλενά μου ...κι εγώ και δεν ξέρω γιατί!
Γίνεται και με τα δύο είδη αν και η μαμά μου χρησιμοποίησε άσπρο γιατί είχαμε ξεμείνει από καλαμποκάλευρο. Έγινε όμως τέλεια και ίσως λίγο πιο αέρινη.

Πω πω τι μου θύμισες... Ο πατέρας μου ήταν από Ήπειρο και οι θείες μου κι αδελφές του, ήταν μαστόρισσες σ' αυτού του είδους την πίτα με καλαμποκάλευρο η οποία ήταν η αγαπημένη μου μακράν! Την έχω δοκιμάσει στη νηστίσιμη εκδοχή της με μπόλικο άγριο μάραθο αλλά ποτέ με παντζαρόφυλλα. Ωραία προσθήκη/παραλλαγή και επίσης δεν είχα σκεφτεί ποτέ να χρησιμοποιήσω άσπρο αλεύρι, για μια δοκιμή όμως γιατί όχι?

Όλες οι Ηπειρώτισσες γνωρίζουν την τέχνη της πίτας και ειδικά αυτής της πίτας. Με το μάραθο φαντάζομαι είναι πεντανόστιμη αλλά δοκίμασέ την και με τα παντζαρόφυλλα που της δίνουν μια διαφορετική και πιο γλυκιά επίγευση!

Εξαιρετική στην όλη σύνθεση όπως και στην εκτέλεση άλλωστε Κική μου. Και κοίτα να δεις που πατσαρόφυλλα δεν έχει τύχει, να χρησιμοποιήσω σε πίτα ποτέ.

Εύκολη στην εκτέλεσή της η ηπειρώτικη μπαμπανέτσα και σίγουρα νόστιμη και στην νηστίσιμη αλλά και πόσο μάλλον στην αρτίσιμη εκδοχή της.

Πανεύκολη και πεντανόστιμη! Πίτα της στιγμής θα την έλεγα Σωσώ μου... και στις δύο εκδοχές της αν και, πράγματι, στην αρτύσιμη είναι ανώτερη!

Μία πίτα μονταρισμένη από τα πιο άξια χέρια!Από τα χέρια μιας παλιάς και σοφής νοικοκυράς που σε καμμιά περίπτωση δεν μπορείς να αμφισβητήσεις την αξεπέραστη τέχνη της,το αδιάκοπο μεράκι της και την αδιαπραγμάτευτη πείρα της.
Με υλικά κόπου και κήπου,αλλά και με πινελιές τολμηρές αρωματικών στοιχείων,μας κερνά υπέροχα κομμάτια πίτας με παράδοση και μαεστρία ετών.
Συγχαρητήρια στην μανούλα σου Κική μου για την υπέροχη πίτα!!

Να είσαι καλά Φωτεινή μου... με τη μαμά μου έχουμε την ίδια αδυναμία στις πίτες και συνήθως έχουμε κάθε μέρα ένα είδος πίτας στο σπίτι.
Πάντως αξίζει να δοκιμαστεί γιατί είναι πεντανόστιμη και πανεύκολη!

Γεια στα χέρια της μανούλας σου, Κική. Πολύ ωραία η πίτα της! Οι Ηπειρώτικες πίτες, είναι από τις πιο γνωστές. Πάντα θαύμαζα φίλη μας, από τα Ζαγοροχώρια, όταν την έβλεπα να ανοίγει φύλλο για πίτα!! Τα χέρια της πετούσαν. Και εγώ με καλαμποκίσιο αλεύρι γνωρίζω την μπαμπανέτσα, αλλά και με το λευκό, είναι μια χαρά. Μια γρήγορη σχετικά πίτα, αλλά νόστιμη. Για όποτε δεν έχουμε καιρό να ανοίξουμε φύλλο, είναι ιδανική πρόταση.

Μπραβο Κικη παρα πολυ νοστιμη πιτα!Μολις βγηκε απο το φουρνο και ειναι πραγματικα τελεια!Μετα το Πασχα θα δοκιμασω και την αρτυσιμη εκδοχη της που φανταζομαιτα αυγα,τα τυρια και το γαλα θα την απογειωσουν!Σε ευχαριστω για τη συνταγη.
